Sugar-Free Peanut Butter Cookie Dough Truffles (Low Carb, Keto)
These Keto Sugar-Free Peanut Butter Cookie Dough Truffles are Low Carb and can be made nut free as well as dairy free!
Cookie Dough you can eat without the worry of raw eggs is the best kind of cookie dough in my opinion! It's creamy, luscious and perfect for a quick snack on the go!
I'm also always looking for ways I can adapt a recipe to make it peanut nut free for my youngest who has a tree nut and peanut allergy and this recipe can easily be adapted. Sadly now my daughter is feeling like dairy may be causing her issues. Good news again her is that this recipe can easily be made dairy free. It's a win for everyone!
Ingredients:
- 1 cup peanut butter, unsweetened (or sunflower seed butter for a nut-free option)
- ½ cup butter, softened (or coconut oil)
- ½ cup Swerve sweetener (or another granulated sugar-free sweetener)
- 2 tablespoons almond milk, unsweetened (or coconut milk for a nut-free option)
- 1 teaspoon vanilla extract
- 1 teaspoon vanilla liquid stevia
- ¾ cup almond flour (or coconut flour for a nut-free option)
- ½ teaspoon salt
- Optional: sugar-free chocolate chips (such as Lily's Sweets)
Outer Coating:
- 8 ounces unsweetened baking chocolate (I used Ghirardelli)
- ½ teaspoon chocolate liquid stevia
Optional Peanut Butter Drizzle:
- ¼ cup peanut butter, unsweetened
- 2 teaspoons coconut oil, melted
