Gluten-Free French Madeleine Cookies

2 large eggs
2/3 cup sugar
1 teaspoon pure vanilla extract
1/4 teaspoon lemon extract
1 teaspoon lemon zest
1 pinch salt
1 cup gluten-free all-purpose flour (with xanthan or guar gum in the ingredients)
10 tablespoons unsalted butter, melted and cooled
2 tablespoons confectioners' sugar, for dusting, optional
