Citrus Salad

- 2 medium grapefruit
- 2 medium navel oranges
- 2 medium blood oranges or additional navel oranges
- 4 cups arugula
- ¼ cup red onion slivered
- 2 tablespoons salted pistachios or almonds, chopped
- 1 tablespoon fresh mint leaves thinly sliced, or basil
For the dressing
- 3 tablespoons olive oil
- 1 ½ tablespoons fresh lime juice
- 1 teaspoon honey
- pinch salt and pepper
