Easy Arugula Salad

This simple Arugula Salad recipe is so fresh and simple yet tastes fancy!
This is a quick side with lots of flavor making it really easy to put together.
Arugula is a green sometimes called rocket. It has a feathery appearance with a peppery and slightly bitter taste.
This green pairs well with other strong ingredients and a bright sweet dressing. Serve it with a side of homemade focaccia bread or add some croutons.
Ingredients:
 
- 6 cups arugula washed & dried
 - 1 cup cherry tomatoes
 - 1 ounce parmesan petals
 - ¼ cup red onion finely sliced
 - 1 tablespoon toasted pine nuts or toasted almonds
 
Lemon Vinaigrette
 
- ¼ cup vegetable oil
 - 1 ½ tablespoon red wine vinegar
 - 1 tablespoon fresh lemon juice
 - 1 teaspoon dijon mustard
 - ½ teaspoon sugar or to taste
