Ingredients:
- 5 ounces arugula
- 2 medium pears cored & thinly sliced, any variety works
- ⅔ cup pomegranate seeds
- ½ cup pistachios crushed/chopped if desired
- 1 medium shallot thinly sliced
- 3 Tablespoons olive oil
- 2 Tablespoons apple cider vinegar
- 1 Tablespoon maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt
