Harvest Bowl (Sweetgreen Dupe)
The Harvest Bowl is one of sweetgreen's most popular bowls, and it's actually really easy (and much less expensive) to make it at home!
Roasted chicken, sweet potatoes, wild rice, apples, goat cheese, and almonds are layered over a bed of curly kale and covered with a tangy balsamic vinaigrette. It's filling, delicious, and perfect for any season.
I really love sweetgreen, but their bowls aren't cheap, so I've set out to recreate my favorite ones. It's also the perfect recipe to meal prep and enjoy throughout the week!
There are a few components, but each of them is pretty simple to make, and you'll be able to make lunch for the week in about an hour!
Ingredients:
Roasted Chicken
- 2 pounds chicken breasts, tenders, or thighs
- 2 tablespoons sunflower oil or other neutral oil
- 1 ½ teaspoons kosher salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon nutritional yeast
Sweet Potatoes
- 1 ½ pounds sweet potatoes
- 1 ½ tablespoon sunflower oil or other neutral oil
- 1 teaspoon kosher salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ⅓ teaspoon nutritional yeast
Wild Rice
- 1 cup wild rice (uncooked)
- 1 ¾ cups vegetable or chicken broth
- 1 tablespoon olive oil
Balsamic Vinaigrette
- ½ cup olive oil
- 3 tablespoons balsamic vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons maple syrup
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Other
- 2 honey crisp apples, diced and tossed in lemon juice
- 12 oz goat cheese
- ½ cup almonds, chopped
- 9-12 cups curly kale, shredded or finely chopped
