Crispy Cheesy Hash Browns with Parmesan Sauce
Hash browns are classic home-style diner food. With cheese inside and tasty Parmesan sauce this simple dish becomes a new family favorite! Ingredients
For hash browns
3 large potatoes
1 onion
2 tablespoons plain flour
pinch salt
freshly ground black pepper
2 eggs
olive oil
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
1 teaspoon dried oregano
For Parmesan sauce
1 1/2 tbsp butter
2 tbsp flour
1 cup milk (I usually take 1% low-fat milk)
1/2 cup shredded Parmesan cheese
1/4 tsp salt
1/4 tsp pepper
1 pinch paprika
Directions
Let’s make the sauce first.
Step 1
Melt the butter in a medium skillet over medium-high heat. Sprinkle flour into melted butter, whisking constantly. Cook, whisking constantly, 30 seconds to 1 minute or until mixture is golden.
Step 2
Gradually whisk in 1 cup milk, and bring to a boil. Cook, whisking constantly, 1 to 2 minutes, or until thickened.
Step 3
Add freshly shredded Parmesan cheese, salt and pepper, and a pinch of paprika, whisking until smooth. Remove from heat. Set aside.
Step 4
Now let’s cook the hush browns.
Grate the potatoes using the large holes of a box grater.
Step 5
Peel and finely slice the onion. Actually, my kids usually ask me to skip the onion, so you can skip it here as well.
Tip for the crispy result: Transfer the potato and onion to a bowl lined with a clean tea towel. Gather up the edges of the tea towel, twist, then squeeze out as much excess liquid as you can.
Step 6
Transfer to a mixing bowl, add the flour, cheddar cheese, parsley, dried oregano, and season well with salt and pepper. Crack in the eggs and mix well until the egg is fully combined.
Step 7
Put a large non-stick frying pan on the heat, and once hot add olive oil and spoonfuls of the mixture, being careful not to overcrowd the pan. Cook for 10 minutes, without moving, until a golden crust has formed, then turn each one over. Continue to cook until golden brown and cooked through, then transfer to kitchen paper to drain before serving up.
Serve with Parmesan sauce and fresh greens.
