The ingredients in Instant Pot risotto are very basic, so choosing the best quality ones will give you the most delicious results.

Ingredients:

  • 2 cups low sodium chicken broth
  • 2 slices Prosciutto, (preferably Prosciutto di Parma)
  • 2 teaspoons olive oil, (preferably extra virgin)
  • 1/2 cup finely chopped shallots, (about 3 small)
  • 3 garlic cloves, minced
  • 2 teaspoons finely chopped fresh rosemary
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup Arborio rice
  • 1/3 cup dry white wine
  • 1 cup frozen green petite peas, thawed
  • 2 ounces Parmesan cheese, (preferably Parmigano Reggiano)
