Ingredients:
- 4 large smoked pork sausages
- 1 tbsp (15 ml) extra virgin olive oil
- 2 large onions, peeled and diced
- 6 garlic cloves, peeled and minced
- 1.5 inch fresh ginger, peeled and grated
- ½ bird’s eye chili, seeded and minced
- 4 large ripe tomatoes
- 4-5 sprigs thyme, stemmed
- 1 bay leaf
- ½ tsp freshly ground black pepper
- salt (to taste)
