Yogurt Bowl with Harissa Chickpeas & Persimmon Salad

This Herby Yogurt Bowl is creamy and crunchy, warm and cold, spicy and fresh. And yet it comes together in no more than 15 minutes.

I made this Herby Yogurt Bowl with warm Harissa Chickpeas and a sweet and crunchy persimmon salad last Wednesday. You can see the step-by-step cook along here! It's creamy and crunchy, warm and cold, spicy and fresh. Seriously, I can’t stress the deliciousness of this meal enough.

Ingredients:
  • 1/2 tbsp olive oil
  • 1 bashed garlic clove
  • 1/2 tsp ground cumin
  • 1 tbsp rose harissa (or 1/2 tbsp harissa)
  • 100 g / 2/3 cup chickpeas
  • 1 tbsp sesame seeds
  • 1 handful dill
  • 1 handful mint
  • 1 celery stick
  • 1 Lebanese cucumber (or 1/3 cucumber)
  • 3 lettuce leaves (cos or romaine)
  • 1/2 persimmon (or 3 dried apricots)
  • 1/2 lemon
  • 1/2 cup yogurt
