Teriyaki Chicken Salad
Teriyaki Chicken Salad combines pasta, spinach, nuts, oranges, water chestnuts, sweet onion, and tender chicken, all mixed with a 3-ingredient dressing.
Ingredients:
- 12 ounces farfalle/bowtie pasta
- 5 ounces (5-1/2 cups) baby spinach leaves, coarsely chopped
- 2 cups diced cooked chicken
- 1/2 cup dry roasted peanuts or cashews
- 1/2 cup dried cranberries
- 1 can (8 ounces) water chestnuts, drained & diced
- 1 can (15 ounces) mandarin oranges, drained
- 2 tablespoons sweet onion, finely diced
Dressing
- 1/4 cup + 2 tablespoons teriyaki sauce
- 3 tablespoons vegetable or canola oil
- 3 tablespoons rice wine vinegar
