Easy Breakfast Sandwiches

These easy Breakfast Sandwiches are going to make your morning better. Crusty bread topped with provolone, feta, and egg mixture and baked to perfection, these sandwiches are a true delight.

I learned this recipe from my Bulgarian friend, who made a spin on traditional Bulgarian "Sirenki" which are made with just eggs and feta as a topping. My friend suggested adding "kashkaval" (or some kind of cheese that melts well) for additional flavor and better texture. Now, these sandwiches are a staple in my family, and my husband enjoys these for breakfast at least two times per week.

These Breakfast Sandwiches can also be customized, to add additional flavors and switch them up a bit. I will share some mix-in and topping ideas below, but for now, let's take a look at what goes into the classic version of this recipe.

Ingredients:
  • 4 medium slices of your favorite bread
  • 3 oz. good-quality feta cheese (about 1 cup when crumbled)
  • 3 oz. provolone, or other cheese that melts (about 1 cup)
  • 2 medium eggs
