Ingredients:
- 2 cups chopped cooked chicken
- 2 tablespoons chopped red onion
- 1/3 cup sweet corn cut fresh from the cob
- 1/3 cup black beans, rinsed and drained
- 1-2 mangoes, chopped
- 1 medium avocado
- 1 avocado peeled and pitted
- 1/3 cup Greek yogurt or sour cream
- 3 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1/4 cup loosely packed cilantro leaves and stems
- 1 garlic clove, peeled
- 1 small jalapeno, seeds removed and roughly chopped
- 1/2 tsp each ground cumin, chili pwdr, smoked paprika, salt
- 1/4 teaspoon pepper

- 5 slices Monterrey or Pepper Jack Cheese
- Chopped tomatoes
