There are so many delicious tequila cocktails that focus on citrus fruit like margaritas and Cantaritos, but some nights I want a cocktail that has a kick, like this cowgirl paloma.
This drink is a spicy twist on the classic paloma. It starts with silver tequila, bittersweet grapefruit juice, and lime juice. But instead of simple syrup, this cocktail is sweetened and spiced with hot honey, and I’m tossing in a few rounds of fresh jalapeño, too. The finishing touch is chilled club soda for a spicy, fruity, and refreshing cocktail that I’m happy to drink until the cows come home.

- 2 ounces freshly squeezed red or pink grapefruit juice (1 medium)
- 1 1/2 ounces silver or blanco tequila
- 1/2 ounce freshly squeezed lime juice (1/2 medium lime)
- 1/4 ounce hot honey
- 1/2 medium jalapeño, cut crosswise into 4 (about 1/4-inch thick) rounds, divided
- 2 ounces chilled sparkling water or club soda
- 1 grapefruit slice, for garnish
