Easy Summer Vegetable Soup

- 1 tablespoon minced garlic (about 5 medium garlic cloves)
- Salt and pepper
- 2 teaspoons dried Italian herb seasoning
- 6 cups chicken broth or vegetable broth
- 6 Roma tomatoes, chopped
- 1 1/2 cups diced zucchini
- 1 1/2 cups diced summer squash such as pattypan, crook neck, or tatuma
- Leaves from a couple of sprigs of fresh thyme
- 4 tablespoons chopped fresh Italian parsley
