Sweet Potato and Steak Salad

When you want a hearty main dish salad, this steak salad recipe is the one to make. It’s loaded with tender steak, crispy roasted sweet potatoes, and creamy avocado. A bright, delicious avocado dressing ties everything together.

The great part about this salad is that it’s so easy to adapt. You can customize it to your family’s tastes. Throw in whatever you have on hand that sounds good: cherry tomatoes, feta, blue cheese crumbles, red onion? The world is your oyster!

We think homemade avocado salad dressing is delicious, but feel free to use whatever your family likes. My kids love this healthy ranch dressing on their salads.

The best part? Everything cooks quickly in the air fryer, so you get a steakhouse-style salad with minimal effort and easy cleanup.

Ingredients:
Salad
  • 2 large sweet potatoes cubed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 8 cups mixed greens
  • 1 ½ pounds steak sirloin, strip, or ribeye
  • 2 large ripe avocados sliced
  • ½ cup purple cabbage shredded

Avocado Dressing
  • 1 large avocado pit and skin removed
  • ¼ cup lemon juice 1 large lemon
  • 1 whole clove garlic
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh chives
  • ¼ cup olive oil
