This chicken Madeira is a favorite dish of mine! It encompasses everything I love about simple cooking without skimping on flavor. The mushrooms are cooked in the wine slowly for about 15 minutes, just until the sauce reduces and thickens a bit, giving the sauce that amazing depth of flavor. I served this chicken dish over mashed potatoes, but pasta or rice would work just as well.

Ingredients:

  1. 1 pound chicken breasts skinless and boneless, about 3 to 4
  2. ½ teaspoon salt or to taste
  3. 1½ teaspoon pepper or to taste
  4. 3 tablespoons olive oil
  5. 1 pound cremini mushrooms cleaned and sliced
  6. 2 cloves garlic minced
  7. 2 cups Madeira wine or a dry red wine
  8. 1 cup chicken broth
  9. 1 tablespoon all-purpose flour optional
  10. 2 tablespoons butter
  11. 2 tablespoons fresh parsley chopped
