Soft Sugar Cookies with Almonds

Almond Sugar Cookies, are insanely delicious and so simple to prepare – there’s no chilling, rolling or cookie cutters required. Made with just 8 basic ingredients, this easy drop-style sugar cookie recipe yields thick, melt-in-your-mouth-soft cookies with the perfect amount of chew and complex almond flavor! Enjoy your almond cookies warm fresh from the oven, or top them with icing and slivered almonds. Either way, these sugar cookies with almonds will quickly become your family’s favorite, too!

Ingredients:

  • 2 ¾ Cup All-Purpose Flour – spooned & leveled (328 grams)
  • 1 tsp Baking Soda
  • ¾ tsp Cream of Tartar
  • ½ tsp Kosher Salt
  • 1 Cup Unsalted Butter – softened to room temperature
  • 1 ¼ Cup Granulated Sugar – plus more for rolling cookies
  • 1 large Egg + 1 Large Egg Yolk – at room temperature
  • 2 tsp Almond Extract
  • Almond Glaze:
  • 2 Cups Powdered Sugar - leveled & sifted
  • 3 TBS Milk, Cream or Half-and-Half
  • 2 TBS Light Corn Syrup
  • ½ tsp Almond Extract
  • Sliced Almonds – optional for decorating
