Instant Pot Creamy Vegetable Soup
This Instant Pot Creamy Vegetable Soup is packed with plenty of vegetables and potatoes, cooked in a seasoned creamy base, and finished off with cheese! A family favorite amongst kids and adults, this soup is perfect on a cold evening.
Ingredients:
3 slices bacon sliced lengthwise, then diced
1 medium yellow onion diced
1 stalk celery diced
2 medium carrots peeled and diced
3 cloves garlic minced
1 tsp kosher salt
1/2 tsp black pepper
1/4 tsp paprika
1/4 tsp dried thyme
2 cups small broccoli florets
1 – 2 russet potatoes peeled and diced into small pieces (you want about 3 cups of diced potatoes)
4 cups reduced sodium chicken broth divided
1 cup heavy whipping cream
2 Tbsp cornstarch
8 oz can whole kernel corn drained
