Thai Green Curry with Spring Vegetables

Thai Green Curry with Spring Vegetables is a vegetarian dish that's bursting with flavor and nutrients. Fresh vegetables such as asparagus, snow peas, and bell peppers are simmered in a fragrant green curry sauce made with coconut milk and Thai green curry paste. Ingredients:

  • 1 tbsp coconut oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp Thai green curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 bell pepper, sliced
  • 1 cup snow peas
  • Salt and pepper to taste
  • Cooked rice for serving
