Panzanella Salad

This classic Tuscan Panzanella Salad is the perfect marriage of crusty bread and refreshing salad! Made with a blend of toasted cubes of bread, juicy tomatoes, fragrant basil, tangy capers, and briny Kalamata olives all tossed in a zesty dressing, it’s a delicious mixture of tastes and textures that is impossible to resist!

Ingredients:

Salad

4 cups Italian bread (cut into 1-inch cubes)

4 large tomatoes (ripe, cut into 1-inch cubes)

1 English cucumber (halved, seeded and sliced)

1 medium red onion (thinly sliced)

½ cup fresh basil (roughly torn)

½ cup Kalamata olives (pitted and halved)

¼ cup capers (drained)

Dressing

¼ cup red wine vinegar

½ cup olive oil (extra virgin)

2 cloves garlic (minced)

salt and pepper (to taste)
