Savory Vegetable Cheese Tart

This savory vegetable cheese tart combines a thick buttery crust, a creamy herbed cheese filling, and a beautiful adornment of crisp roasted veggies! Top with fresh herbs and serve as an appetizer, lunch, side dish, or main course.

Ingredients:

Indulge in the delightful harmony of flavors and textures with this Rustic Ricotta and Vegetable Galette. A buttery, flaky pie crust cradles a rich filling of creamy ricotta cheese, savory Parmesan, aromatic garlic, and a medley of fresh or dried herbs. Thinly sliced vegetables, such as sweet potatoes, zucchini, carrots, mushrooms, asparagus, or Brussels sprouts, are artfully arranged on top. The galette is then drizzled with olive oil, sprinkled with coarse sea salt, and adorned with a touch of pepper and herbs.

Ingredients:

  • For the Pie Crust:

    • Use your favorite homemade Buttery Flaky Pie Crust or All Butter Pie Crust (this recipe makes 2 crusts; freeze the second half for later use).
  • For the Filling:

    • 1 cup ricotta cheese, at room temperature
    • 2 large eggs, at room temperature
    • 3/4 cup shredded Parmesan cheese (or your favorite cheese)
    • 2 teaspoons minced garlic
    • 1 tablespoon of your favorite fresh herbs or 2 teaspoons dried herbs (a mix of thyme, rosemary, and parsley works wonderfully)
    • 1/2 teaspoon salt
    • A pinch of black pepper
  • For the Vegetable Topping:

    • 1-2 cups thinly sliced vegetables, such as sweet potatoes, zucchini, carrots, mushrooms, asparagus, or Brussels sprouts*
  • For the Finishing Touch:

    • 2 tablespoons olive oil
    • Coarse sea salt
    • Additional pepper + herbs for garnish
