Cauliflower & Kohlrabi Soup
This kohlrabi recipe combines roasted kohlrabi and cauliflower in a creamy soup that’s full of flavor. It’s a delicious fall soup that will warm you up on a cool, crisp day.

1 head of cauliflower broken into florets
3 kohlrabi bulbs, peeled with stems removed and the blubs cut into pieces
4 tablespoons olive oil, divided
1 yellow onion, diced
6 garlic cloves, roughly chopped
1 teaspoon dried oregano
1 ½ teaspoons kosher salt
¼ teaspoon ground black pepper
4 cups chicken stock
1 tablespoon apple cider vinegar
½ cup heavy cream
1 tablespoon chopped fresh parsley for garnish
2 tablespoons grated Parmesan cheese for garnish
