Calling all Baileys lovers – this recipe is for you! This is a rich and decadent dessert flavored with just the right amount of Baileys Irish cream throughout.
The Baileys Irish cream flavor is present in both the cheesecake filling itself and in the whipped cream that’s piped on top of it. And yes, homemade whipped cream is SO much better than the canned! It’s thick, creamy, and the perfect way to adorn such an incredible homemade dessert. Oh, and the espresso-Oreo crust? Swoon. It compliments the Baileys flavor in the most amazing way. (But of course, it’s optional.)
While this is the perfect cheesecake to serve on St. Patrick’s Day, you don’t have to make it just once a year. Make it for a Christmas dessert, a birthday party, or just because. This cheesecake is made from scratch, but fear not! I promise that the steps are clear and a lot easier than you may think.
Ingredients:
Oreo Crust:
- 8.5 oz chocolate Oreo cookies 24-26 cookies
- 1 tbsp instant espresso powder optional
- 5 tbsp unsalted butter melted
Cheesecake Filling:
- 32 oz full fat cream cheese softened
- 1 cup white granulated sugar
- 3 eggs room temperature
- 1/2 cup Baileys Irish cream room temperature
- 1 tsp pure vanilla extract
- 2 tbsp cornstarch
- 1 tbsp cocoa powder
- 1/2 tsp instant espresso powder
Baileys Whipped Cream:
- 1 cup heavy whipping cream
- 1/4 cup Baileys Irish cream
- 1/4 cup powdered sugar
- 1/2 tsp pure vanilla extract
