Baked Chicken Meatballs with Lemon and Dill

I love a great meatball recipe, especially an easy one, and these lemon-dill meatballs check that box, plus more. There’s very little prep involved, the meatballs are baked instead of fried, and they’re great for meal prep if you’re looking to stock the freezer with some easy dinners for later.
They’re also a little unexpected. Ground chicken takes the place of ground beef, and the lemon and dill flavors are fresh and bright, so the overall vibe is light and flavorful. They also happen to go with many things, so we definitely need to add “versatile” to the list of reasons we should all make a batch soon.
