Ingredients:
For the breadcrumbs
  • 1 1/2 tablespoons olive oil
  • 2 small cloves garlic, smashed
  • 1/2 cup panko
  • 1/4 teaspoon kosher salt

For Greek yogurt feta spread
  • 1 1/2 cup plain Greek yogurt
  • 1/3 cup feta cheese
  • 1 1/2 tablespoons finely chopped parsley
  • 1 1/2 tablespoons finely chopped dill
  • 1 1/2 teaspoon lemon zest
  • Kosher salt and black pepper, to taste

For the salad
  • 2 medium zucchinis, ends trimmed
  • 2 medium yellow squash, ends trimmed
  • 2 tablespoons olive oil
  • Kosher salt and black pepper, to taste

Garnish
  • Crumbled Feta cheese
  • Lemon zest
  • Chopped Dill
