Limoncello tiramisù

This not-so-traditional version of the layered Italian coffee dessert swaps coffee and fortified wine for zesty limoncello – a worthy adaptation in our eyes.

This dessert is excellent served with a nip of extra limoncello on the side.

Ingredients:
  • 4 eggs, at room temperature, separated
  • 75 gm (⅓ cup) caster sugar
  • 1 tsp vanilla extract
  • 250 ml (1 cup) limoncello
  • 750 gm mascarpone, at room temperature
  • 100 gm lemon curd
  • Crushed pistachios, to serve

Sponge
  • 4eggs, at room temperature
  • 110 gm (½ cup) caster sugar
  • 100 gm (⅔ cup) plain flour
  • ½ tsp baking powder
  • 60 gm melted unsalted butter, cooled
