Chicken Marengo

Chicken Marengo

I’m a boy mom, so I’m always looking for meals that are satisfying and a good bang for their buck. This chicken Marengo is protein-packed and full of flavor, perfect for filling those bottomless bellies!

Similar to chicken Provencal, this one-pan chicken dish is made from savory chicken simmered in a tomato-based sauce. Legend has it, this was the favorite post-battle dish of Napoleon Bonaparte!

Ingredients:
  • 3 tablespoons olive oil
  • ⅓ cup all-purpose flour
  • Kosher salt and freshly ground black pepper to taste
  • 2½ pounds bone-in chicken leg quarters separated
  • 2 tablespoons unsalted butter (¼ stick)
  • ½ yellow onion sliced
  • 3 cloves garlic minced
  • 8 ounces cremini mushrooms quartered
  • ½ cup dry white wine
  • 15 ounces diced tomatoes drained (1 can)
  • ¼ cup tomato paste
  • ½ cup low-sodium chicken broth
  • Fresh parsley and thyme optional, for garnish

Prep Time:
20 minutes
Cook Time:
30 minutes
Total Time:
50 minutes
