Lightened Up Ham and Potato Soup

Ingredients:
- 3 ½ cups Yukon gold potatoes, diced
- 3 ½ cups low sodium chicken broth
- 8 oz. cooked ham, diced
- ⅓ cup celery, diced
- 1 small yellow onion, finely chopped
- 6 garlic cloves, minced
- 1 Tbsp chicken bouillon granules
- 1 tsp ground white or black pepper, or to taste
- 1/2 sea salt, or to taste
- 4 Tbsp light butter
- 4 Tbsp all-purpose flour-you may use gluten-free flour, if desired
- 2 cups Fairlife skim milk or fat free half and half
- Fresh parsley, chopped for garnish
- Fresh chives, chopped for optional garnish
- Shredded Gruyère cheese, for optional garnish
