There is not much more comforting than a bowl of ham and potato soup on a cold, winter day. This Lightened Up Ham and Potato Soup is creamy, thick, and insanely delicious! It is truly the best ham and potato soup I’ve had. Easy to make with fresh ingredients!

Ingredients:
  • 3 ½ cups Yukon gold potatoes, diced
  • 3 ½ cups low sodium chicken broth
  • 8 oz. cooked ham, diced
  • ⅓ cup celery, diced
  • 1 small yellow onion, finely chopped
  • 6 garlic cloves, minced
  • 1 Tbsp chicken bouillon granules
  • 1 tsp ground white or black pepper, or to taste
  • 1/2 sea salt, or to taste
  • 4 Tbsp light butter
  • 4 Tbsp all-purpose flour-you may use gluten-free flour, if desired
  • 2 cups Fairlife skim milk or fat free half and half
  • Fresh parsley, chopped for garnish
  • Fresh chives, chopped for optional garnish
  • Shredded Gruyère cheese, for optional garnish
