Lightened Up Pumpkin Chili

This Lightened Up Pumpkin Chili is a traditional chili that incorporates pumpkin puree-making for a delicious, hearty, fall comfort meal. Filled with warm spices, pumpkin puree, lean ground beef or turkey, beans, and diced tomatoes! All the flavors of fall!
Around fall my family begs for this pumpkin chili. It’s packed with so much seasonal flavors! A big bowl of pumpkin chili topped with shredded cheese, sour cream, and chips is one of my ultimate cold-weather comfort foods. This is a comfort meal that I’ve loved since I was a kid, and I still can’t get enough of it.
Ingredients:
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 lb. 96% ground lean ground beef or turkey
- 1 (15oz.) can low sodium kidney beans, drained
- 1 (15oz.) can low sodium black beans, drained
- 1 (15oz.) can petite diced tomatoes
- 1 (15oz.) can pumpkin purée
- 1/2 (6 oz.) can tomato paste
- 2 cups water or low-sodium chicken broth or vegetable broth
Spice Ingredients
- 1 Tbsp chili powder
- 1/2 tsp paprika or smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1 tsp kosher salt
