Shrimp Saganaki

Shrimp Saganaki is a great 30 minute meal with shrimp nestled in a vibrant tomato sauce, briny olives, lemon and creamy feta. A Mediterranean diet dish that is simple yet loaded with flavor. While the dish is traditionally prepared in a two-handled pan called a sagani, you don’t need any fancy equipment. I made mine in a regular skillet, and it turned out beautifully. That’s the beauty of this recipe—it’s approachable, flexible, and absolutely delicious.
Ingredients:
- 1 tablespoon olive oil
- ¼ cup shallot, chopped
- 3 cloves garlic, chopped
- 2 cups cherry tomatoes, halved
- ⅓ cup kalamata olives, halved
- 1 ¼ lb jumbo shrimp, peeled and deveined
- 1 lemon, zest and juice
- ¼ cup fresh dill, finely chopped
- 6 ounces feta cheese, cubed in small pieces
