Crispy Tofu Stir Fry

Skip takeout tonight and make my delicious Crispy Tofu Stir Fry! Crunchy tofu, ramen noodles, and sautéed veggies are fried in a delicious sauce that is spicy, sweet, and full of umami flavor. Ingredients:
Tofu
- 16 oz. firm or extra firm tofu, drained
- 2 tablespoons cornstarch
- 1 teaspoon kosher salt
- 3 tablespoons avocado oil
Green Onion Sesame Salad
- 7 green onions, thinly sliced lengthwise into 3-inch pieces
- ½ tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon white sesame seeds
- ½ teaspoon kosher salt
- ½ cup chopped fresh cilantro
Stir Fry Sauce
- ½ cup soy sauce
- ¼ cup rice vinegar
- 2 tablespoons water
- 2 teaspoons chili garlic sauce
- 2 tablespoons fresh grated ginger
- 1 teaspoon fish sauce
- 4 cloves garlic, minced
- 1 tablespoon cornstarch
- 3 tablespoons light brown sugar
Other Ingredients
- 2.5 tablespoons coconut oil
- 8 oz. white mushrooms, sliced
- 1 teaspoon kosher salt
- 2 red bell peppers, chopped
- 8 oz. ramen noodles
- ½ -1 cup starchy pasta water
