Peach Burrata Salad

This Peach Burrata Salad Recipe is fresh and light, making it the perfect summer salad recipe. Sweet, ripe peaches, paired with creamy burrata, herbaceous basil, and spicy jalapeños, then drizzled with olive oil and balsamic glaze is a match made in heaven. This dish makes a great salad or side dish for summer barbecues, the Fourth of July, or any occasion.

Grilling peaches makes them even softer and juicier and really takes your dish to the next level. To grill peaches, slice them and remove the pit, and then place them directly on the grill grates and grill for 3 to 4 minutes on each side, or until lightly charred with grill marks.Fresh mozzarella, cottage cheese, or mascarpone are all great substitutions.

Ingredients:

  •   3 ripe peaches, pitted and sliced into sixths
  • 8 ounces fresh burrata
  • 3 tablespoons balsamic glaze (I use this brand)
  • 2 tablespoon olive oil
  • handful fresh basil leaves
  • 1 small jalapeño, seeded and thinly sliced
  • sea salt and black pepper, to taste
