Stuffed Mushrooms
Stuffed Mushrooms are a healthy way to ring in the New Year! Filled with spinach, parmesan and bread crumbs, they are little bites of yumminess and, dare I say, a perfect way for everyone.
I love these Stuffed Mushrooms because they’re vegetarian and a flavorful and satisfying appetizer or side dish. Perfect to serve at a party or just as a delicious addition to dinner with the family.
Ingredients:
1 8 ounce package white or cremini mushrooms, cleaned
1 10 ounce box chopped frozen spinach, defrosted and drained well
1/4 cup parmesan cheese
2 tablespoons olive oil, plus more for brushing onto mushroom caps
1 teaspoon dried Italian herbs
1/4 cup plain bread crumbs
1/4 teaspoon kosher salt
1 small garlic clove, minced
