Homemade Crepes:
- ¼ cup (50g) granulated sugar
- ⅔ cup (75g) all-purpose flour
- ½ teaspoon (3g) salt
- Zest of 1 lemon
- 3 whole eggs (150g)
- ⅔ cup (150g) milk
- ½ cup (100g) heavy cream
- 1 teaspoon (4g) vanilla extract
Honey Whipped Ricotta:
- 1 ½ cups (340g) ricotta
- 1 ½ tablespoons (30g) honey
- Zest of ½ a lemon
- ½ teaspoon (2g) vanilla extract
To Serve:
- 1 cup strawberries, finely sliced (optional)
