Vegetable Quinoa Pilaf with Honey Mustard Chicken

Ingredients:
  • 2 tbsp olive oil divided
  • 1 tbsp honey
  • 1 tbsp mustard
  • 2 cloves garlic
  • ½ tsp crushed red pepper flakes
  • 1 tsp kosher or sea salt
  • freshly ground black pepper to taste
  • 4 skin-on chicken breasts
  • 1 small onion
  • 1 large carrot
  • 1 bunch swiss chard stems chopped and leaves torn
  • 1 lemon zested and sliced into ½” slices
  • 1 cup chicken broth
  • 1 cup quinoa
