Nothing screams summertime like biting into a juicy, fresh tomato. This Tomato Salad Recipe packs all the fresh and earthy flavors into a delicious side dish. I promise you’ll want a steady supply of fresh tomatoes to serve this cool and juicy salad all season! This Tomato Salad features juicy heirloom tomatoes, briny olives, red onion, and creamy burrata dressed in a lemon herb vinaigrette. In just 15 minutes, you’ll have a fresh and juicy tomato salad ready to serve. Serve it up with lunch or dinner or even take it along to your next BBQ or cookout. If you love Caprese Salad, you will love this loaded variation.

Ingredients:
Lemon-Herb Vinaigrette
  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (from about 1 to 1 1/2 lemons)
  • 2 1/2 tablespoons minced mix herbs of choice (such as dill, tarragon, mint, thyme, basil)
  • 1 grated garlic clove
  • 2 teasoons Dijon mustard
  • 2 teaspoons honey
  • salt and pepper to taste

Salad
  • 3 large, ripe heirloom tomatoes cut into wedges
  • 1/4 small thinly sliced red onion
  • 12 seeded castelvatrano olives halved
  • 8 ounces burrata ripped into a few pieces

Garnish
  • chopped fresh herbs of choice
