This Tomato Salad features juicy heirloom tomatoes, briny olives, red onion, and creamy burrata dressed in a lemon herb vinaigrette. In just 15 minutes, you’ll have a fresh and juicy tomato salad ready to serve. Serve it up with lunch or dinner or even take it along to your next BBQ or cookout. Ingredients:
Lemon-Herb Vinaigrette
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh lemon juice (from about 1 to 1 1/2 lemons)
- 2 1/2 tablespoons minced mix herbs of choice (such as dill, tarragon, mint, thyme, basil)
- 1 grated garlic clove
- 2 teasoons Dijon mustard
- 2 teaspoons honey
- salt and pepper to taste
Salad
- 3 large, ripe heirloom tomatoes cut into wedges
- 1/4 small thinly sliced red onion
- 12 seeded castelvatrano olives halved
- 8 ounces burrata ripped into a few pieces
Garnish
- chopped fresh herbs of choice
