Ingredients:
- 1 8 oz block tempeh cut into bite-sized cubes
- 1 tablespoon olive oil or avocado oil
- 2 medium heads of broccoli chopped small
- 1 large carrot sliced into sticks or chopped small
- 2 large bell peppers red and yellow, sliced
Sauce
- ¼ cup tamari or soy sauce if not gf
- 2 tablespoon rice vinegar or apple cider vinegar or lime juice
- 4 tablespoon creamy peanut butter can substitute tahini
- 3 tablespoon water or more to thin if needed
- 1 teaspoon maple syrup
- 1 teaspoon sriracha or chili garlic sauce (optional but delicious)
- 1 teaspoon fresh ginger minced/grated or ¼ teaspoon ground ginger
- 4 cloves garlic or ½ teaspoon garlic powder
