  • 1 cup old-fashioned oats
  • 1 cup whole wheat flour, or all purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • pinch of fine kosher salt
  • 2 tbsp melted coconut oil
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 2/3 cup agave syrup , or maple syrup
  • 1 large apple of choice, finely diced
  • 1-2 tbsp fresh lemon juice
  • 2 tsp lemon zest
