Blackberry Overnight Oats

When you feel your breakfast routine needs a change, this Blackberry Overnight Oats may be the solution. The oats are nourishing and satisfying and certain to become a family favourite. A creamy oat base is sweetened with maple syrup and flavoured with the brightness of lemon zest. To serve, we add a topping of Greek yoghurt and perfectly ripe, sweet blackberries. Simply spend a few minutes at night preparing the oats, and in the morning your breakfast is ready to enjoy or take on the go. It doesn’t get much easier than this!

Ingredients:
For the Overnight Oats
  • 1 ¼ cups (300 ml) milk – I use almond or oat
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon lemon zest
  • 1 cup (80 g) old fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup

Toppings
  • 125 g (4.4 oz) blackberries
  • ½ cup (125 ml) Greek yoghurt
