Apple Enchiladas

Have you tried apple enchiladas before? It’s a sweet twist on a classic dessert, and trust us, it’s a game-changer. Think warm, gooey cinnamon-sugar apples wrapped in tortillas, baked to perfection, and topped with a brown sugar sauce. They’re delicious!
This recipe is a perfect example of Mexican fusion, where we take familiar flavors and give them a fun, unexpected twist. In this case, we’re taking the comforting flavors of apple pie and combining them with the familiar format of enchiladas. The kids think they are SO fun and we love that they’re easy!
You get all of those favorite apple pie flavors but in a ridiculously simple dessert. Fill the tortillas with pie filling (one of our go-to shortcuts), make the sauce, and bake (for about 25 minutes). That’s it!

- 6 (8-inch) flour tortillas
- 1 teaspoon ground cinnamon, or more to taste
- ½ cup white sugar
- ½ cup packed brown sugar
- ½ cup water
- ⅓ cup butter
