For this lemon tiramisu, ladyfingers are dipped in a sweetened limoncello liqueur mixture and then sandwiched between a creamy mascarpone lemon filling. It’s all topped off with a layer of whipped cream.

Ingredients:
For the soaking liquid
  • 1 cup (250 ml) water
  • 1/4 cup (60 ml) limoncello liqueur
  • 5 Tablespoons (60 g) white granulated sugar

For the lemon cream filling
  • 3 large eggs, SEPARATED
  • Pinch salt
  • 1/2 cup (120 g) white granulated sugar
  • 2 1/4 cups (500 g) mascarpone cheese
  • 1 1/2 Tablespoons lemon zest, plus more for garnish
  • 6 Tablespoons + 2 teaspoons lemon juice, about 2 lemons

For assembling
  • 20-24 ladyfinger biscuits

For topping
  • 1 cup heavy whipping cream, 35% b.f.
  • 1-2 Tablespoons icing/confectioners' sugar
