Pineapple Coconut Margarita

This Pineapple Coconut Margarita will transport you straight to the beach! With pineapple, coconut milk, lime and tequila, it's refreshing, creamy, slightly sweet, tart, and dangerously delicious. It's easy to make and extra fun with a coconut lime zest rim.

I've probably already said this about 15 different cocktail recipes, but I'm pretty sure this pineapple coconut margarita is my favorite cocktail recipe I've ever shared.

It's pretty similar to a piña colada, just with tequila instead of rum. It's also a bit less sweet, more tangy, and a bit lighter. I love a good margarita, and this recipe definitely hits the spot, especially with some chips, guac and tacos!

A word to the wise – definitely don't skip the coconut lime rim! Not only does it look extra cute, but it's also delicious. The perfect final touch!

Ingredients:
Cocktail
  • 3 ounces reposado tequila
  • 1 ounce orange liqueur (Cointreau, Grand Marnier, Triple Sec)
  • 6 ounces unsweetened pineapple juice
  • 3 ounces full fat coconut milk
  • 1 ½ ounces freshly squeezed lime juice
  • 1 ounce simple syrup or agave

Coconut Lime Rim
  • 1 tablespoon kosher salt
  • 1 tablespoon granulated sugar
  • ½ tablespoon lime zest
  • 2 tablespoons finely shredded coconut
  • 1 tbsp simple syrup or agave
  • For garnish: lime wedges
