Airmail Cocktail

I've been building my home bar around classic cocktails, and this little project has taught me more than I could have imagined. I’m noticing the nuances between different bottles of liquor, appreciating the impact of ice, and fine-tuning ingredient proportions to suit my taste. As I move beyond Home Bartending 101, I’m trying variations on my most beloved drinks, like this Airmail cocktail.
The Airmail cocktail is a combination of two of my favorites, the classic Hemingway daiquiri and the French 75. It starts with rum and fresh lime juice, swaps one-note simple syrup for the rich flavor of honey syrup, and is topped off with chilled sparkling wine. While you could serve this drink up (without ice), I prefer to pour it over ice in the summer so that it’s super-chilled and more refreshing.
Ingredients:
For the honey syrup (Makes about 1/3 cup)
- 1/4 cup honey
- 1/4 cup water
For each cocktail
- Ice
- 11/2 ounces white or silver rum
- 3/4 ounce freshly squeezed lime juice (from 1 medium lime)
- 3/4 ounce Honey Syrup
- 2 ounces chilled dry sparkling wine, such as prosecco or Champagne
- Fresh mint leaves, for garnish (optional)
