This salad works because it’s super crunchy and has a fantastic combination of competing flavors – the meaty crisp of bacon and walnuts, the subtle sweetness of apples and honey, the zesty tang of onion, blue cheese, and the vinaigrette dressing – such complexity and depth of flavor for just a few ingredients!

Ingredients:
  • 2 strips bacon thinly sliced
  • ½ red onion peeled and thinly sliced
  • 8 cups kale wash and torn off the stem and into small pieces
  • ½ cup chopped walnuts toasted

  • ¼ cup blue cheese crumbles

Dressing
  • 2 tablespoons olive oil
