Easy Cauliflower Pasta

My Easy Cauliflower Pasta is a budget-friendly, quickly made meal that you will make often. It is a simple, light meal, but one that is deeply satisfying. The delicate flavour of cauliflower is elevated by the sunny Mediterranean flavours of garlic, olives, chilli and lemon juice. This classic, simple pasta dish allows the cauliflower flavour to shine through, and the finishing touch of grated Parmesan enhances the flavours of this delicious pasta dish.
Ingredients:
- 340 g (12 ounces) dried gemelli pasta
- 500 g (1.1 lbs) cauliflower - cut into small florets
- 80 ml (⅓ cup) extra virgin olive oil
- 4 large garlic cloves - finely chopped
- 2 tablespoon parsley stems - finely chopped
- 90 g (½ cup) Kalamata olives - pitted and cut in half lengthways
- 3 teaspoon fresh long red chilli - finely chopped
- 2 tablespoon lemon juice - freshly squeezed
- 4 tablespoon flat-leaf parsley - finely chopped
- 40 g (½ cup) Parmesan cheese - freshly grated
- 1 cup pasta water - reserve before draining pasta
- sea salt and pepper - to taste, if necessary
For Serving
- a drizzle of olive oil
- additional grated Parmesan cheese
