Vegetarian Burrito

This Veggie Burrito recipe is the perfect way to enjoy a healthy and flavorful meal that's both satisfying and easy to make. Filled with a delicious combination of vegetables, black beans, brown rice, and a variety of flavorful spices, these burritos are sure to become a new favorite for vegetarians and non-vegetarians alike. Ingredients:

  • 1 cup uncooked brown rice
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained and rinsed
  • 1 can (4 ounces) chopped green chilies, drained
  • Salt and black pepper, to taste
  • 6 whole wheat tortillas, warmed
  • Optional toppings: shredded cheddar cheese, salsa, avocado, sour cream, chopped fresh cilantro
