Sesame Chicken

We love a good weeknight meal here at The Busy Baker, especially meals made in 30 minutes or less with minimal dishes to wash. This Sesame Chicken is one of our favourite quick and easy meals – crispy chicken pan fried with stir fried veggies in a simple sweet and savoury sauce. Serve it over some rice and you’ve got a delicious and wholesome meal everyone will love!
Ingredients:
1 pound chicken breasts cut into 1 1/2 inch chunks
FOR THE MARINADE:
2 cloves garlic finely minced
2 tablespoon soy sauce
1 tablespoon sesame oil
2 teaspoon rice vinegar
1 egg
FOR THE CRISPY COATING:
3/4 cup all purpose flour
3/4 cup cornstarch
FOR COOKING:
1/3 cup vegetable oil for frying
2 teaspoons sesame oil
2 carrots thinly sliced on a bias
3 spring onions thinly sliced on a bias
2 cloves garlic finely minced
1/2 teaspoon ginger finely minced
FOR THE SAUCE:
1/2 cups chicken stock
1/4 cups soy sauce
2 teaspoons rice vinegar
2 tablespoons honey
2 tablespoons water
2 tablespoons cornstarch
2 tablespoons sesame seeds
