Kung Pao Chicken

Kung Pao chicken, also transcribed Gong Bao or Kung Po, is a spicy, stir-fried Chinese dish made with cubes of chicken, peanuts, vegetables, and chili peppers.
Ingredients:
- 2 lbs. boneless, skinless chicken breasts, cut into bite sized pieces
- 1/2 cup low-sodium soy sauce, divided
- 1/3 cup rice vinegar or sherry vinegar
- 1 Tbsp hoisin sauce
- 1½ Tbsp white granulated sweetener or sugar
- 2 Tbsp cornstarch
- 2 Tbsp toasted sesame oil
- 1 large red bell pepper, diced
- 1 large green bell pepper, diced
- 1 bunch green onions, white and green parts, cut into 3-inch pieces
- 1 Tbsp minced fresh ginger
- 2 Tbsp minced garlic
- 10 dried red chili peppers
- 1/4 cup dry roasted peanuts
