3 medium Carrots – peeled & sliced or diced (about 1 cup)
3 medium Ribs Celery – sliced or diced (about 1 cup)

1 heaping TBS Homemade Italian Seasoning - (or store-bought)
3 TBS Tomato Paste
1 (28 ounce) Can Crushed Tomatoes
1 (14.5 ounce) Can Fire-Roasted Diced Tomatoes
4 Cups Low-Sodium Chicken Broth or Vegetable Broth
2 whole Bay leaves
1 whole Parmesan Rind - (OPTIONAL)
1 Cup Heavy Cream, Half and half or Whole Milk – or more to taste
3 Cups Fresh Baby Spinach -(about 3 ½ ounces)
